Salad Savoy® Recipes

Salad Savoy® Cheesy Bread

Bake Time: 15 to 18 minutes  | Serves: 6

Ingredients

1 tablespoon olive oil

3 cups coarsely chopped Salad Savoy®

2 cloves garlic, minced

1/4 teaspoon salt

1/4 teaspoon black pepper

1 8-ounce package cream cheese, softened

2 tablespoons mayonnaise

1 1-ounce packet ranch dressing mix

1 large French baguette

1 cup shredded mozzarella cheese

Parmesan cheese, for sprinkling

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet over medium heat, heat oil until hot. Add Salad Savoy®, garlic, salt, and pepper. Sauté for 4 to 5 minutes, stirring occasionally, until tender. Set aside.

  3. In a medium bowl, combine cream cheese, mayonnaise, and ranch dressing mix. Mix well.

  4. Cut the baguette in half lengthwise and place both halves cut side up on a baking sheet.

  5. Spread the cream cheese mixture evenly over both cut sides. Top evenly with the Salad Savoy®, then sprinkle with mozzarella and Parmesan cheeses.

  6. Right before serving, bake for 15 to 18 minutes, or until heated through. Serve immediately.


Farmer Fritters

Makes: 10

Ingredients

3 cups Salad Savoy®, finely chopped

1/4 cup finely chopped onion

1/4 cup crumbled cooked bacon

1/2 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon black pepper

3 eggs, lightly beaten

1/4 cup vegetable oil

Instructions

  1. In a large bowl, combine all ingredients except the oil. Mix well.

  2. In a large skillet over medium heat, heat the oil.

  3. Drop heaping tablespoons of batter into the skillet, making sure not to overcrowd.

  4. Cook for 2 to 3 minutes per side, or until golden.

  5. Remove to a paper towel-lined platter.

  6. Repeat with the remaining batter and serve immediately.


Country Sausage Soup

Ingredients

2 tablespoons olive oil

3/4 cup chopped onion

3 cloves garlic, minced

4 cups chicken broth

3 potatoes, peeled and cubed

1 sprig fresh rosemary, removed from stem and chopped

1/4 teaspoon salt

1/4 teaspoon black pepper

1 16-ounce package smoked sausage, cut into 1/2 inch pieces

3 cups chopped Salad Savoy®

Instructions

  1. In a soup pot over medium-high heat, heat oil until hot. Sauté onion and garlic for 3 to 5 minutes, or until tender.

  2. Add chicken broth, potatoes, rosemary, salt, and pepper; bring to a boil.

  3. Reduce heat to low and simmer 10 minutes.

  4. Add sausage and Salad Savoy®, and simmer for 10 more minutes, or until heated through.


Not Your Every-Day Caesar Salad

Serves: 6

Ingredients

1 cup mayonnaise

1/4 cup grated Parmesan cheese

4 anchovies

2 tablespoons fresh lemon juice

1 teaspoon Worcestershire sauce

1 clove garlic

1/4 teaspoon black pepper

1 head Salad Savoy®, shredded

1 cup croutons

Instructions

  1. In a blender, combine all ingredients except Salad Savoy® and croutons. Blend for 1 to 2 minutes, or until smooth and creamy.

  2. Place Salad Savoy® in a large bowl and toss with the dressing.

  3. Top with croutons and serve immediately.


Hearty Italian One Pot

Ingredients

1 tablespoon olive oil

1 pound turkey sausage, casing removed

1 cup chopped onion

6 cups chicken broth

3 15-ounce cans Great Northern beans, drained

2 carrots, peeled and cut into 1/2 inch chunks

2 potatoes, peeled and cut into 1/2 inch chunks

3 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon black pepper

3 cups chopped kale, using a mixture of Bright Lights® and Salad Savoy®

Instructions

  1. In a soup pot over medium-high heat, heat oil. Cook sausage and onions for 8 to 10 minutes, or until sausage is browned.

  2. Add the remaining ingredients, except the greens, and bring to a boil.

  3. Reduce heat to low and simmer for 25 minutes, or until carrots and potatoes are tender.

  4. Stir in greens and cook for 15 minutes, or until greens are wilted.
